My husband and I looked at each other and smiled, knowingly. We were sitting in the veterinarian’s exam room, as she gave our fifteen-year-old Persian cat, Sabrina her annual examination. This young, engaging vet had asked about Sabrina’s health and we had explained that she’s really in great shape for her age.

“Her coat is so soft and beautiful for a cat her age,” she agreed. “What kind of food does she get?” We told the vet about Sabrina’s grain-free food, then emphasized that she gets at least a half teaspoon of virgin coconut oil each day. “Oh, that explains it!” Then she got a gleam in her eye. Turns out she had recently attended a veterinary nutrition course that had her extremely excited.

As we continued to discuss Sabrina’s health, we began to address how older cats can sometimes struggle with arthritis. And then she said something we didn’t expect, and that’s what made us smile, “Have you ever heard of bone broth?” I hadn’t yet mentioned my nutrition background. Delighted, I said, “I have a crockpot of beef bone broth brewing right now!” And, the conversation took off from there.

On the way home with Sabrina in her cage meowing, Tim and I talked about how extraordinary it was to hear a veterinarian suggest bone broth for our animals. Our excitement grew as it dawned on us that this vet was having similar conversations with other pet owners. Even though she’s mainstream, she’s preaching a nutritional approach to animal health. Talk about spreading the word!

Remembering back to a not so distant past, bone broth was something we only talked about amongst ourselves, like quinoa, or stevia. Today, these items are readily available in just about every super market in the U.S. How exciting to see these changes taking shape, and it’s all because of dedicated holistic nutrition professionals like you!

Meet The NANP Conference Chef!

Hello, I am Chef Victor and I was born and raised in Chicago. 

I started with Marriott 20 years ago in Chicago, then moved on to Arizona, and have now been at the beautiful Portland Marriott Downtown Waterfront for 9 years.  I am a Chef who has had the opportunity to have hands-on training throughout my career and my passion is cooking! 

For me, cooking is an art, a way to express oneself through food.  It is very rewarding to see people eating and enjoying my food, it is such a fundamental part of a conference and I strive to ensure it is an amazing one.  I have continued to grow my career with Marriott through various training and by learning from our Executive Chefs.  I work with a dynamic team that helps me create and execute tasty, colorful, dynamic food to all of our guests.
